I have finally been able to hook my board's serial connection up with my laptop, so I can inspect the (failing) boot sequence.
Here is a particularly interesting sequence of the output stream:

The first thing to note is that, despite the note about a "maintenance shell", the board really reboots immediately (and thus I never get a chance to interfer, and the fs maximum mount count is reached etc.)
I also don't quite understand what the precise error is that triggers the boot process to abort in the first place. Is it the error just above, about "General error mounting filesystems.ss ..." ?
Any idea what I could do about it ? In fact, is there anything I can do (once I mount the filesystem directly from my laptop) to fix the boot process so it will give me the promised maintenance shell ?
Also, what is this error about the ld.so inconsistency detected by ld.so ?
