An approach similar to using a live CD would be to install a virtual machine (such as Virtual Box) on the Windows laptop and run Ubuntu on it. The virtual Ubuntu would have the same hard drive space limitations as its Windows host (instead of a 2 GiB RAM limit).
I use precisely that setup at work, and it allows switching the µSD card between Windows and Ubuntu from the Virtual Box menu: no need to physically unplug and plug the µSD card itself. Saves on wear and tear.
